DESCRIPTION: This wine is produced only in certain growing years, and only from a careful selection of the finest quality red grapes from the estate vineyards. It is a wine of superb complexity, significant power, distinctive character, and impressive longevity.
SERVING SUGGESTIONS: Excellent both as an aperitif or drunk with a meal.
YIELD PER HECTARE: 50 hl
HARVEST: Hand-harvested into small crates form the second third of September to midOctober.
VINIFICATION: Controlled-temperature maceration and fermentation with indigenous yeasts s, for 18 days in stainless steel, with daily punch downs and pumpovers. Malolactic fermentation and ageing for approx. 48 months in new 500 litre Oak tonneaux.
ANALYTICAL DATA: Alcohol 16.00%, Total Ac 5.50 g/l, Ph 3.55, Residual sugar 1.00 g/l, Dry extract 34.00 g/l.

PROFILE
A red wine of iconic, even saintly, importance for Cantrina, Nepomuceno is made from merlot that achieves an impressive, natural ripeness on the Lake Garda hills, which gives this wine its striking aromatic character, presaged by the near-impenetrable depth of its purple-garnet appearance. A powerful bouquet reaches an embracing seductiveness, marked by overtones of spice from the wine’s stay in oak, and by merlot’s herbaceous and balsam contribution. That complex sensory richness carries through onto the palate, which is also notable for its lean mouthfeel, and for the tannins that continue into a finale exhibiting a magisterial balance between sweet and bitter.
Its most heavenly partners are red meats and game, especially if slowcooked.
